As for the nipping, definitely try the high-pitched 'ow!' and walk away - that is what kittens do after all when one of them is playing too roughly, and how they learn their limits.

As for the food, try mixing in the chicken with the wellness. Also, if you have a PetsMart nearby, I have heard that kittens can't resist Authority Kitten Chicken and Liver, and have had great success with it myself weaning kittens off their mother.
