Fat isn't going to hurt your cats liver, maybe its pancreas but not its liver.
What you really want is low protein, under 30% protein if possible and try to avoid carbs. So lean meats like rabbit (80% protein) are not the friend of your cat with liver disease.
Here's a good example using a single piece of meat that helped me a ton realizing I'm going to be able to make this work. A whole chicken thigh is about 35% protein and 65% fat. Remove the skin and the chicken thigh becomes 70% protein and 30% fat. At first that didn't make sense to me, but the Percentages aren't coming from volume but rather the calorie count.
For our purposes, Dr Pierson did want to use some carbs so we can get some organ meat in the mix. For the Carbs we plan on using sweet potatoes to make up about 10% of the calories.
Anyway, as I said I'm pretty stoked about rolling forward on this and even if I was buying canned food I am far better informed.
