Are you washing with a strong enzyme cleaner such as Anti Icky Poo or Unique Distributors? Have you completely soaked the mattress with this product? You might try covering the bed with a waterproof tarp while you're not in it - it's a bit of a hassle but may keep her off. Cats like soft absorbent material to pee on, a tarp is just the opposite so they avoid these types of surfaces.
