Is it odd that she hasn't eaten or slept? Should I be concerned or is this expected as she adjusts to her new environment?
Not odd at all. She'll come around in a day or two as she settles in from her trip and the change of environment. You're already way ahead of most of us. Last cat I got peed right away but didn't poop for 7 days.

I would not worry right now about her not eating, her stress level is probably high enough that it has suppressed her appetite. Once she is more relaxed and settled in she will probably be ravenous and make up for lost time ;)

Thank you for all your replies! She slept a lot last night and started eating today!

However, she started nipping at our toes today. I read some advice on some other threads about nipping and it seems to be working. If she nips, we yell OW loudly and leave the room for a minute. After nipping us ~10 times this morning, she hasn't done so for a few hours...hopefully this continues.
