If you think the urination is excessive I would have your vet run some blood tests to make sure there is no kidney issue or diabetes.

Boiled chicken breasts are going to be remiss of many of the vitamins your cats need, and is more like a treat food. Fish should also be kept to a minimum and used primarily as a treat food if they enjoy it.

If your cats are eating a majority of chicken breasts, at a minimum I would add 500mg of taurine a day between the two of them and preferably a supplement to be used with raw slab meat or whole prey. Cooking will definitely reduce the amount of nutrients in the chicken, so you might want to do a quick 30 second boil just to get any surface bacteria off the chicken.

There's a lot more than just the meat your cat needs to stay healthy. Skin, bone and organ meat are important as well, and with any food the goal should be to mimic what they would eat in nature, whole prey as in a rabbit, bird, squirrel or mouse.
