I would give her system a little time to settle before worrying too much over the consistency of the poop. She's had quite an upset to her digestion with all that clay/sand in it! Are you giving her a probiotic to help her gut replenish the good bacteria to help her digestion?
So saying that, there IS a possibility that the reason she was eating the litter was because her tummy felt bad and that she actually does have some sort of gastrointestinal infection. I don't know if a fecal PCR test was ever done for her?
