The way I have seen cats' heights measured for Guinness was to lie them on their side then measure from the shoulder blade to the toes while stretching the leg.

For me, weighing is easy. Both girls just sit on the scale till I tell them "OK". Kilifi has only let me measure her once. Now I need at least another set of hands. Zidi.. I would need a army batallion.

It's easier to just ask them to show how big they think they are

For what it's worth I now use a large scale I got on Amazon. I previously had a baby type scale and it just didn't hold them well after they grew. This new scale works well and easily handles my SV's:
